Jaja Reta, Kue Persembahan Hingga Sajian Untuk Tamu
Jaja Reta, kue kering hasil olahan tangan masyarakat Bali ini selalu mewarnai setiap banten (persembahan). Pada saat Hari Raya Galungan dan Kuningan, hingga Hari Raya Nyepi, jaja yang bentuknya kecil 10 Cm X 4 Cm dilipat seperti kipas itu pasti mudah ditemukan. Warnanya putih kekuning-kuningan dan pada ujung atasnya berwarna merah karena berisi lapisan gula berwarna merah. Jika dikunyah, rasanya gurih dan lezat, karena itu Jaja Reta juga sebagai jaja sajian para tamu. Jaja Reta bisa bertahan hingga dua minggu.
Dulu , Jaja Reta dibuat dalam ukuran besar untuk hiasan gebogan yang disandingkan dengan Jaja Gipang. Jaja Reta dipasang di tengah-tengah gebogan, lalu diapit dengan Jaja Gipang dalam ukuran besar pula. Bahkan, dibeberapa daerah di Banli, Jaja Reta bentuknya besar seperti roda hingga bisa dimakan dengan dua sampai tiga orang. Belakangan, Jaja Reta dikemas, baik dalam penampilan ataupun dalam rasa, sehingga tampak indah dan manis. Jaja reta dengan penampilan baru itu, telah menghisai pasar-pasar tradisional hingga swalayan ternama di kota-kota besar di Bali.
Ni Wayan Suastini, seorang pengusaha Jaja Reta asal Banjar Tude, Desa Tegal Jadi, Kecamatan Marga, Kabupaten Tabanan sehari-harinya selalu disibukan dengan membuat Jaja Reta. Apalagi menjelang Galungan, ibu dua putra ini selalu banyak order. Ia, bahkan tidak memiliki waktu senggang, karena sibuk meladeni pelanggan. Belum lagi meladeni pembeli dadakan, artinya pembeli jaja yang tidak tetap. Hal tersebut, tentu membuat dirinya kelabakan. “Saya kewalahan meladeni pembeli Jaja Reta. Maklum, saya memproduksi Jaje Reta hanya sendiri, tidak bersama karyawan,” katanya polos.
Di Desa Tegaljadi itu, ada banyak masyarakat yang memproduksi Jaja Reta, namun entah kenapa, orang-orang justru membeli pada dirinya. Memang, jaja tradisional ini dibuat dengan cara khusus, sehingga hasilnya juga sedikit agak lama dibandingkan dengan pengusaha jaja yang lain. “Jaja Reta buatan disini, bisa menjadi jaja camilan sehari-hari, bukan hanya untuk hiasan banten belaka. Saya memiliki pelanggan dari Kota Denpasar, Kota Tabanan hingga Gianyar,” akunya.
Wanita sederhana ini mengaku, dirinya tidak banyak memiliki pelanggan karena membuat jaja reta ini bukan lahir karena bisnis. Ia membuat jaja karena suka saja. Setiap hari raya, ia lebih suka membuat kue dari pada membelinya. Disamping untuk hidup hemat, juga untuk menjaga kesehatan. Baginya, membuat jaja reta untuk mengenang masa anak-anak yang doyan dengan jaja reta. “Saya ingin melestarikan budaya Bali khususnya dibidang kuliner dan lebih tepatnya Jaja Reta,” ungkapnya.
Jaja Reta buatannya, tidak memakai zat pewarna ataupun pengawet. Bahan yang dipergunakan, adalah tepung beras yang sudah masak, tepung ketan, garam, air kelapa parut secukupnya dan gula pasir. Mula-mula tepung beras dan tepung ketan dicampur garam lalu diaduk. Selanjutnya diisi air hangat secukupnya. Kelapa yang sudah diparut juga dimasukan lalu diaduk hingga halus atau sekitar 15 menit. Setelah itu, dicetak dengan alat kemudian digoreng. Gula dicampur air sehingga menjadi gula cair. Warnanya sesuai dengan selera. Jaja Reta yang sudah dingin lalu dioleskan gula cair itu. Paling banyak laku adalah Jaja Reta yang tidak berwarna karena gulanya masih alami. (AD/Ar)
